From 2005 Giovanni oversaw every aspect of the opening of the Café Trussardi in Piazza della Scala, where criteria of modernity, revised and adapted, were developed with extreme success given the centrality of the location and the internationality of the audience.
In 2013 the turning point of Dry, the restaurant in via Solferino, where Giovanni created the simple but revolutionary Cocktail & Pizza formula, a design-infused environment, excellent raw materials for flexible but at the same time consolidated drink lists and menus, a club atmosphere and rare gems to define the "sound identity", personally curated.
Hence a series of prestigious collaborations starting with an icon of Milanese hospitality such as the Excelsior Hotel Gallia and then moving on to Florence to lead the F&B department of Lungarno Collection, where he was part of the strategic team in the study of the project Portrait Milano and came to play a decisive role in bringing the Beef Bar to Milan, a globally successful operation.
During the summer of 2022 Giovanni supported the upgrade from 4 to 5 stars of the wonderful Due Lune Puntaldia Resort & Golf.
Today considered one of the reference startuppers for the upper upmarket segment.
Currently involved, as advisor, in the opening of The Wilde, a next-generation private members' club in Milan.
